This weekend at Grandma's

So this week were gonna go back to my roots. I stayed this weekend at my grandma’s house and she made one of my favorite dishes and inspired me to put it on my blog for you guys to try it out! This recipe is for "Arroz con Pollo" (yellow rice with chicken). Arroz con Pollo is a traditional dish for that my latin family loves. The Arroz con Pollo is very similar looking as a paella, a traditional dish from Spain. The most exciting part about making this Arroz con Pollo is that every culture can put their own “sazon” (seasoning) to give it more of a Cuban feel to it. So let me tell ypu guys about it and how its made.


Chicken and rice Recipe:
• 1 tablespoon achiote (annatto) seeds
• ¼ cup olive oil
• 4 chicken thighs, skin on
• Goya adobo, or garlic salt, as needed
• Ground black pepper, as needed
• 1 link chorizo sausage, diced
• 1 link Italian sausage, diced
• 1 batch scallions, greens and whites separated, chopped
• 1 shallot, chopped
• 1 small poblano pepper, chopped
• 1 small jalapeno, chopped
• Goya adobo, or garlic salt, as needed
• 3 cloves garlic, chopped
• 6 oz. dry white wine
• 2 cups long grain rice
• 1 (14.5-oz.) can chicken broth
• Sofrito from above recipe
• 1 tablespoon paprika
• 1 small batch cilantro, chopped

Sofrito Recipe:
• 1 large tomato
• 1 small or half a large poblano pepper
• 1 small jalapeno
• Half of a small onion
• 2 garlic cloves
• 1 small batch cilantro and/or culantro
Coarsely chop the tomato, peppers and onion.  Place all of the ingredients in a blender and pulse to a rough puree.

Lets Get This Sushi On a Roll!

Usually people go out and spend about 15 to 20 dollars on a roll of decent sushi, but I'm not trying to go bankrupt because unfortunately, I love sushi… a lot. so today, I'm gonna show you guys my recipe for some traditional sushi rolls.

Ingredients:

    2 cups of short grain rice
    2 cups of water
    2 table spoons of rice vinegar
    2 tablespoons of sugar
    1 tablespoon of salt
    6 oz. of your fish or vegetable of choice

So you're gonna start off by placing the rice into a mixing bowl and cover it with cool water then swirl the rice in the water, once thats done, pour off and repeat 2 to 3 times or until the water is clear.Place the rice and 2 cups of water into a medium saucepan and place over high heat. Then bring the water to a boil. Once it begins to boil, reduce the heat to the lowest setting and cover it, let it cook for 15 minutes then remove from the heat and let stand, covered for 10 minutes. Once all that is done, combine the rice vinegar, sugar and salt in a small bowl and heat it up in the microwave on high for 30 to 45 seconds. Then transfer the rice into a large mixing bowl and add the vinegar mix. Flatten the rice to combine and coat each grain of with the mixture. Allow it to cool to at room temperature before using to make sushi. Once the rice is ready to be rolled, place your choice of fish or veggie on top of the rice. Then gently roll the rice around the contents until they are firmly held together. Then finally allow it to sit until it dries, and enjoy!
